Chicken Quesadillas

***Plan ahead! The chicken takes at least 30 minutes to cook! Unless you have leftovers, which is really neat!***

4 flour (8 inch) tortillas

1 cup Pepper Jack cheese, shredded

1 cup Cheddar cheese, shredded

1/4 cup onions, diced

1/2 cup green peppers, diced

5 oz can (I don't know what size these really come in...I never use all of my can, but can't find a small enough one) of diced tomatoes and chilies, drained.

2 cloves Garlic, minced

1 chicken breast, cooked and diced (about 1 1/2 cups chicken)

1/2 tbsp Vegetable Oil

1/2 tsp Cumin

1/2 tsp Chili Powder

If you don't have already cooked chicken from something else, look here for a nice way to cook the chicken. I really like baked chicken, its flavorful, but not overpowering for the quesadillas.

Once the chicken is done (or if leftover, just reheat a bit in the microwave so it's not ice cold going into the quesadillas), fry the onions, peppers and garlic in a bit of vegetable oil until tender. I gave some measurements, but I never actually measure, just eyeball what looks good. With the spices just dust the top with each one. Once the vegetables are tender, mix in the tomatoes and chilies, cumin, and chili powder. If you don't like a hot quesadilla leave out the chili powder and cut back a bit on the tomato/chile mix. Ray likes it hotter then I do, so I plan on separating into two piles at this point next time. Once this is all mixed up together, it's time to build the quesadillas. (Oh, remember to turn off the burner once you are done frying the veggies. It's already hot enough that the other stuff will warm up a bit when you add it.

Heat skilled over medium heat and place a tortilla in skillet, spread cheeses over it Add half the veggie mix and half the chicken. Put a bit more cheese on top. Cover with another tortilla. Wait until most of bottom cheese has melted (3-5 minutes or shorter depending on amount of stuff in tortilla) and flip over the entire thing. Once all of cheese is melted, serve. Repeat with the other half the stuff. Now the easier way to do this is split into fourths and do each shell one at a time so you are don't have to the messy flip...I never remember to do it the easy way though.
