Swiss and Bacon Dip

8 slices center cut bacon, diced
8 oz softened cream cheese
1/2 cup of mayonnaise (this has a funny aftertaste and neither of us really like mayo so I think I'm going to try sour cream next time)
2 rounded tsp of prepared Dijon mustard
1 1/2 cups shredded Swiss cheese
3 scallions, chopped (or just use onion as I did)
1/2 cup smoked almonds (which I didn't use)
Something for dipping...I like chips
Preheat oven to 400. Brown bacon and then drain crisp bacon bits on paper towels. In a mixing bowl, combine cream cheese, mayo, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly - about 15-18 minutes. Top with almonds if wanted.
Makes 6 servings.
