Cabbage Bread

1 cup finely shredded cabbage (they used half red and half green, I used all green)

1 tsp lemon juice

1/2 cup plain yogurt (I actually used Greek plain yogurt and it was good)

1/4 cup orange juice concentrate

1/2 cup vegetable oil

1/4 cup powdered milk

1 egg

1 cup whole wheat flour

3/4 cup flour

1/4 cup sesame seeds

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/8 tsp cloves

1/8 tsp ginger

Preheat oven to 350. Place cabbage in small bowl and toss with lemon juice.

In a medium bowl, combine yogurt, OJ, oil, powdered milk and egg, blending well. Stir in cabbage.

In a large bowl, combine flour, sesame seeds, baking powder, baking soda, salt and spices. Mix well.

Gradually add in cabbage mixture. Mix until blended.

Pour the batter into either full pan or mini pans.

Place into over and bake for 35-45 minutes for large loaf or 15-20 minutes for smaller or until done.
