Oriental Chicken Roll Ups

Modified from Paula Deen/Applebees

1 bag of romaine lettuce (or you can just buy romaine and go from there)

small onion, chopped

10 chicken nuggets (or you can use leftover chicken of any type)

1 (3 oz) pkg ramen noodles with seasoning pack

1 tbsp toasted sesame seeds

1/2 cup vegetable oil

1/4 cup sugar

3 tbsp white vinegar

1/4 tsp salt

1/4 tsp ginger (I'm adding this next time)

4 flour tortilla (burrito size)

Cook chicken nuggets according to package. Let them cool and then dice them (see why you could use leftover chicken here). Preheat the broiler. Clean lettuce and dice onions and place in large bowl. Toss in sesame seeds. Crumble noodles into a broiler pan broil for 1-2 minutes (watch it or it will burn). Cool and then add to bowl.

In a jar with a tight lid, combine oil, sugar, vinegar, salt, and ginger with contents of seasoning pack. Cover the jar and shake well to blend the dressing. Pour the dressing over the salad and then toss to combine.

Place 1/4 of salad on one of the tortillas with 1/4 of the chicken. Roll up burrito style. Repeat with other three. Serve cold.
