Pork Spanish Rice
Modified from Taste of Home
1 medium green pepper, chopped
1 small onion, chopped
2 tbsp butter
1 can (14.5 oz) diced tomatoes, drained
1 cup chicken broth
1/2 tsp salt
1/4 tsp pepper
1 3/4 cups cubed pork (so there was a recipe for this and I LOVE leftover recipes like this so I made it, but wasn't impressed with it. You can check it out here, but in my opinion, it was dry which is an inexcusable sin in a crock pot recipe)
1 cup uncooked instant rice
1 tsp dried cilantro
In large skilled, saute green pepper and onion in butter until tender. Stir in tomatoes, broth, salt, cilantro and pepper. Bring to a boil, stir in pork and rice. Transfer to a greased 2 quart making dish. Cover and bake at 350 or until rice is tender and liquid is absorbed, about 20-25 minutes. Stir before serving.
Serves 4.
