Honey Teriyaki Chicken

Modified from Rachael Ray

4 chicken breasts or thighs

vegetable oil

salt and pepper

1 cup chicken broth or water

1 inch ginger root, peeled and chopped

1/4 cup honey

1/2 cup teriyaki sauce

1 tbsp sesame oil

Preheat grill pan to medium high heat. Lightly coat chicken with oil, salt and pepper. Start chicken cooking - 6 minutes on the first side. While cooking, bring chicken broth and ginger to a boil, stir in honey. When honey has dissolved into broth, add teriyaki sauce and sesame oil and reduce heat to simmer. Turn chicken and coat with sauce. Cook chicken 4 minutes, turn again and baste the other side, then cook for 2 more minutes.

****This recipe was made to be done in just 30 minutes, next time I think Ray and I are going to marinade the meat instead of basting because we didn't think it was flavorful enough.****
