Raspberry Jam

Modified from Pick Your Own

6 cups mushed raspberries (if you want seedless, run it through a food mill first)

1 1/2 boxes no sugar added pectin (pink box)

4.5 cups sugar

Sterilize jars. Clean raspberries and de-seed if you like. If you didn't, mush the berries. Measure sugar and set aside 1/4 cup of sugar to mix with pectin (you need about 1 1/4 boxes). Mix berries and pectin/sugar mixture and bring to a full boil. Prep lids. Mix in rest of sugar and bring back to a boil and boil hard for 1 minute. Skim excessive foam. Test "jell." Fill jars and process in a water bath (check for length, due to altitude). Remove and cool.

Makes 7-9 jelly jars.
