Minestrone

Modified from Pasta Cookbook

1 large onion, diced

2 cloves garlic, minced

2 carrots, chopped

3/4 cup cut green beans

3 tbsp olive oil

6 cups water (???I had too much last time, this is slightly reduced, until I make this again, I'm not sure how much water is really necessary, it definitely was too watery last time).

14 oz can diced tomatoes

1 tbsp basil

1 tsp thyme

2 oz small pasta

salt and pepper to taste

1 tsp oregano

Parmesan Cheese to garnish

Parsley to garnish

Put all fresh veggies (including garlic) into large saucepan with olive oil. Heat until sizzling, then cover, lower heat and sweat the veggies for 15 minutes, shaking occasionally.

Add water, tomatoes, herbs and seasoning. Bring to a boil, replace lid and simmer for about 30 minutes gently.

Add pasta and simmer for 10 more minutes or until noodles are done. Check seasonings and serve hot. (Can be served cold if desired. It also reheats and freezes well. The flavor improves after a few days in the fridge.)
