Zucchini Cookies

Modified from Apple Turnover Murder by Joanne Fluke

1 cup white sugar

1 cup brown sugar

1 cup butter, softened

1 tsp baking soda

2 large eggs, beaten

1 1/2 tsp vanilla

1 1/2 cups shredded zucchini

12 oz bag of chocolate chips [they did 1 cup chocolate chips and 1 cup walnuts, I don't like walnuts, hence I did all chocolate chips]

4 cups flour

Mix sugars and butter until nice and fluffy (they recommend a wooden spoon...I'll admit it...I used my mixer as Adam loves to play with it!). Mix in baking soda next. Beat the two eggs and then add to bowl. Add in vanilla and mix thoroughly.

Shred zucchini and add it to your bowl (pack it down). Stir until incorporated. They have you add in chocolate chips (and walnuts) here...I didn't because I wasn't sure if I'd make it not using my mixer, but as I did, I probably will next time. I assume you need to add the zucchini first because of the water content hence then you don't want to beat it too much.

Mix in the flour one cup at a time, stirring well. When all was added in, it will be very stiff - that last cup is hard on the arms!

Drop by teaspoonful on cookie sheet (if your cookie sheet isn't non-stick, make sure to spray it or use parchment).

Bake the cookies at 350 F for 10-12 minutes (this took me more like 15 minutes but I make big cookies).

Makes 8 dozen cookies (I only got about 5 dozen...the big cookie thing!)
