Caramel Apple Muffins

Modified from Taste of Home


Muffins

2 cups of flour

3/4 cup sugar

2 tsp baking powder

2 1/2 tsp cinnamon

1/2 tsp salt

1 egg (they say large, I used extra-large as I always do)

1 cup milk (I used 2%)

1/4 cup butter, melted

2 tsp vanilla

1/2 tsp peeled, chopped apple (I used our own frozen)

12 caramels, chopped (this was a pain in the butt)


Topping (I didn't make this)

½ cup brown sugar

¼ cup quick cooking oats

3 tbsp butter, melted

1 tsp cinnamon

In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients until moistened. Fold in apples and caramels. Put into muffins pans. Sprinkle topping if you made it.


Bake at 350 for 20-25 minutes. Serve warm (these are best warm).
