Lemon Dill Halibut

Modified from 365 Days of Crockpotting

12 oz halibut, fresh or frozen

salt and pepper

1 tbsp lemon juice

1 tbsp olive oil

1 1/2 tsp dried dill

Pull out a long strip (like 18 inches) of aluminum foil. Spray with cooking spray. Put in crock pot so that you can halibut in middle. I also ran one opposite direction to help with the crimping later.

In a small bowl, wish lemon juice, olive oil and dill.

Put halibut in middle of foil. Salt and pepper. Drizzle with lemon juice mixture. Crimp the foil to leave lots of air instead to steam.

Cook on high for 90 minutes to 2 hours (it took me 2 hours). It should easily flake when done.
