Cocoa Cola Cake
Modified from Quick Cooking
1 package (18 1/4 oz) white cake mix
1 cup regular cola
2 eggs
1/2 cup buttermilk
1/2 cup butter or margarine, melted
1/4 cup baking cocoa
1 tsp vanilla
1 1/2 cups miniature marshmallows
FUDGE FROSTING:
1/4 cup baking cocoa
1/2 cup butter or margarine, cubed
1/3 cup regular cola
4 cups powdered sugar
In a large mixing bowl, combine the first seven ingredients. Beat on medium until smooth (couple of minutes). Fold in marshmallows - they disappear, but add a great taste. Pour in greased (do this...my cake came out in pieces because I didn't do this seriously enough!) 13 by 9 in baking pan. Bake at 350 for 35-40 minutes or until toothpick comes out clean. Cool on wire rack before icing.
Combing cocoa and butter in a saucepan. Cook over low heat until blended. Bring to a boil, stirring constantly. Remove from heat, stir in powdered sugar until smooth. Spread on cake. Let stand for 20 minutes before cutting.
Makes 12-15 servings (REALLY!).
