Pizza Meat Loaf Cups
Modified from Taste of Home
1 egg, beaten
1/2 cup pizza sauce (I also did sweet chili sauce, which was fabulous!)
1/2 cup bread crumbs (they only used 1/4 cup, I'm upping this next time as it seemed very wet and they were falling part)
1/2 tsp Italian seasoning (I used straight basil on when I did the chili sauce)
1 1/2 lbs ground meat (use a lean one...I used game....I did moose burger and caribou sausage...ground chicken might work with the chili sauce as I'm going for Thai Chicken pizza flavor)
1 1/2 cups shredded mozzarella cheese
***So the pizza ones were pretty bland....I will try adding pepperoni next time....I might do diced cucumbers shredded carrots with the chili ones as that again goes with the Thai Chicken pizza theme. I might also do some diced peppers/onions.***
Preheat to 375. In large bowl, mix the first 4 ingredients. Add beef and might thoroughly. Divide between 12 muffins cups. Press into each greased muffin cup. I used a boat press. Fill center with cheese.
Bake until meat is cooked, 15-18 minutes. Can top with additional sauce (you can't really dip these - they fell apart).
Makes a dozen cups.
