Bacon Cheddar Bites
Modified from Pampered Chef
1 pkg pie crusts (2 crusts), softened
8 slices bacon, cooked and crumbled
(2 plum tomatoes, diced - I didn't use this, hence it is in parentheses - but I do think I need to replace this with something so I'll let you know if I make it again what I decide on. If you like tomatoes, just use them of course)
1 cup shredded cheddar
4 oz cream cheese, softened
2 tsp Dijon mustard
1 garlic cloves, minced
Preheat oven to 400. Cut pie crust into squares (I made some non-squares since the crust was a circle) and press into the brownie bite pan. Bake for 8-10 minutes or until golden brown.
Mix rest of the ingredients while it cooking. Then use the small cookie scoop and put a scoop in each baked pie shell. Bake for 5-7 more minutes or until cheese is melted.
