Zucchini Flour

Slice zucchini (or any squash) into thin slices. We tried peeling as some websites suggested, but it was really hard to work with (both before, during and after). Put in dehydrator at 135 for 8-10 hours. You want it completely dried out. Let cool.

Put into a food process and process until powdered.

If you plan to store, they recommend storing with a desiccant (like silica) and I can see that - it will gather moisture quickly.

You can use 1:1 in place of coconut flour or replace 1/3 of regular flour in recipes with with it.
