White Chocolate Pumpkin Dreams

Modified from Plum Pudding Murder by Joanne Fluke

1 cup butter, softened

1/2 cup sugar

1/2 cup brown sugar

1 large egg, beaten

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 tsp nutmeg

1 tsp cinnamon

1/2 tsp caradamon [you can lump all three of these together and use pumpkin pie spice if you like, I keep all three on hand, so I did it that way.]

1 cup pumpkin [NOT pumpkin pie mix]

2 cups flour

1 pkg (12 oz) white chocolate chips

Spray your cookie sheets if necessary (mine don't need it). Preheat to 350.

Mix sugars to a uniform color. Add butter and beat to light and fluffy. Add egg and mix. Stir in baking powder, baking soda and salt. Mix thorougly. Mix in spices. Measure out the pumpkin and add it in and mix until smooth. Add flour in 1/2 cup increments, stirring well each time. Add in chips. [They alsed added in 1 cup of chopped pecans, which I left out.]

Drop onto cookie sheet (they will spread in baking). Bake for 12-14 minutes or until they're firm. Keep on the cookie sheet for a few minutes before transferring to a cooling rack.

They frosted these....I find frosting cookies pointless, so I didn't. They also said you could just sprinkle with powdered sugar. I liked them plain.

Makes 6 dozen cookies [okay, I only got about 3-4 dozen....some of that was missing nuts I'm sure, some is that I always make large even when TRYING to make small.]
