Spinach Brownies

1 cup dark chocolate chips

1 1/2 cups spinach puree

1 cup brown sugar

1/2 cup unsweetened cocoa powder

8 tbsp butter

2 tps vanilla

4 eggs

1 1/2 cups flour

1 tsp baking powder

1 tsp salt

1/2 pkg mini chocolate chips or a 1 cup or so of nuts (they used chocolate chips, but I did some with nuts for my father as well), optional

To puree the spinach, put fresh spinach into the food processor with a tbsp or two of water. Process until you have puree. Once you get it going, you can just keep adding more spinach and pureeing it into it until you fill the food processor. Then just start again. Any extra, you can freeze into ice cube trays and then store in storage bags/containers. They are easy to add to things like chili or spaghetti sauce for an extra punch of nutrients without really noticing.

Preheat oven to 350.

Melt butter in a large bowl. Stir in chocolate chips until melted (I had to toss this back into the microwave for 25-30 seconds to finish melting these).

Mix the sugar, vanilla, eggs, cocoa powder and spinach puree into the chocolate-butter mixture.

Add in flour, salt and baking powder until just incorporated.

Mix in chocolate chips or nuts if using.

Put brownies into 2 8X8 pans OR two brownie pans (that's what I used).

Baking for 20-25 minutes (my brownie pans took 20 minutes, I would assume the 8 by 8 will take 25) or until middle is set.

Makes 24 brownies.
