Ginger Banana Bread

2 cups flour

1 tsp baking soda

½ tsp salt

¼ cup chocolate chips

½ cup chopped crystallized ginger

½ cup butter, softened

¼ cup sugar

2 eggs (they used large, I used extra large)

1 tsp vanilla

2 bananas, mashed

½ cup sour cream or Greek yogurt


Preheat oven to 350. Grease a bread pan.


In a small bowl, mix flour, salt, and soda.


In a large bowl, beat butter and sugar until fluffy. Beat in eggs, then add vanilla. Blend in bananas and sour cream.


Add flour mixture until just incorporated. Mix in ginger and chips (they did this in another order, this is what I did).


Bake for 45 minutes or until cooked through.
