Hot Chocolate and Marshmallow Cookies

Modified from Triple Chocolate Cheesecake Murder by Joanne Fluke

1 cup sugar

1 cup brown sugar

1 cup butter, softened

2 eggs (they say large, I used extra large)

1 tsp vanilla

1 packet hot chocolate

1/2 cup hot water

2 tsp cocoa powder

2 tsp sugar (in addition to what you used earlier)

1 tsp salt

2 tsp baking powder

3 1/2 cups flour

1 pkg milk chocolate chips

mini marshmallows

Mix hot chocolate packet with 1/2 cup hot water. Set aside to cool. Preheat oven to 350.

Put sugars in mixed and combine. Add softened butter and beat until fluffy. Crack eggs and add them one at a time until incorporated. Mix in vanilla. Mix in cooled hot chocolate (you don't want to cook the eggs).

Put cocoa powder in a small bowl and mix in extra sugar, salt and baking powder. Add to working bowl and mix in. Then add in flour incrementally, until all incorporated. Mix in chocolate chips.

Drop onto cookies sheets (I used a medium cookie scoop). Then press a marshmallow into each cookie. So I probably make larger cookies than others and my one little one looked rather sad (and like an over easy egg!), so I will probably do at least two per cookie net time.

Bake for 10-15 minutes (they say 10-12, mine took 14 minutes, but again I tend to make large cookies). Let sit for a minute or two before putting on cooling racks.

About 4-5 dozen cookies.
