Strawberry Jam

Modified from Pick Your Own

5-6 cups crushed berries

1 1/2 boxes no sugar added pectin (the pink box)

4 cups sugar

Sterilize the jars in the dishwasher (you can skip this and then run them longer in the water bath). Wash, haul, dice fruit. Crush the fruit a little. Measure the sugar and set aside 1/4 cup. Mix this 1/4 cup of sugar with pectin (you'll need a little more than 1 box...about a box and a half). Mix sugar/pectin into the berries and cook until at a full boil. At this point, get the lids into hot water so they are ready. Add rest of the sugar and boil, hard, for 1 minute. Remove from heat. Remove any excessive foam. Test the "jell" to see if you are done. Fill jars and put on lids and rings. Process in a boiling water bath. You will need to check their chart (or any chart) to see how long because it depends on altitude. Remove jars and cool (make sure the lids "pop").

About 8 jelly jars.
