Peanut Butter Cupcakes

1/3 cup butter, softened

1/2 cup peanut butter

1 1/4 cups packed brown sugar

1 large egg

1 tsp vanilla

2 cups flour

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp cinnamon

3/4 cup milk

Preheat to 350.  In a large bowl, cream the butter, peanut butter and brown sugar until light and fluffy, 5-7 minutes.  Beat in egg and vanilla.  Combine the dry ingredients, add to creamed mixture alternatively with milk, beating well after each addition.

Fill cupcake pans, each lined with cupcake liner, to about 2/3rds full.  Bake for 18-22 minutes or until done.  

Frost as you like.  I linked PB frosting, but you can also do chocolate for a PB chocolate cupcake.
