Zucchini Banana Bread

Modified from Taste of Home

1 1/2 cups flour

1 cup sugar

1 tsp cinnamon

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg

1 cup mashed bananas (this is 2 bananas)

1/2 cup canola oil (I used vegetable oil and it was fine)

1 tsp vanilla (they did 1/2 tsp of vanilla and 1/2 banana extract....which I didn't have and didn't feel like buying...didn't miss it and just used all vanilla)

1 cup shredded zucchini

1/2 cup chopped walnuts (I skipped this)

In large bowl, combine first 6 ingredients. In a small bowl, beat the egg, bananas, oil and vanilla (or extracts). I used a potato masher on the bananas and did this all by hand. Stir into dry ingredients until moistened (again by hand for me). Fold in zucchini and walnuts if you want them.

Put in loaf pans (they did three mini loaves....I did a double batch and did 2 regular loaves and 4 minis), coated with cooking spray. Bake at 325 for 40-45 minutes (if doing full loaves might take a little longer) or until passes the toothpick test.
