Pink Lemonade Cookies

Modified from Red Velvet Cupcake Murder by Joanne Fluke

1/2 cup softened butter (salted)

1/2 cup sugar

1/2 tsp baking powder

1/4 tsp baking soda

1 large egg, beaten

1/3 cup frozen pink lemonade (regular also works) concentrate, thawed

3 drops liquid red food coloring

1 3/4 cups flour

Beat softened butter and sugar until mixture is light and fluffy. Mix in baking powder and baking soda. Beat until well combined.

Mix in beaten egg and lemonade concentrate. Add red food coloring. Add flour in parts, beating after each addition.

If too sticky, you can refrigerate, I didn't need to. Drop onto a cookie sheet by teaspoonful.

Bake at 350 for 10-12 minutes (it took me about 15 minutes). Let cookies cool on cookie sheet for a few minutes before you put on racks to cool.

Makes 3 (or so) cookies.

The book has a recipe for frosting, but I didn't make it as I don't frost cookies.
