Chicken Taquitos
Modified from blog
3 cups cooked chicken, shredded for diced
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
salt and pepper to taste
1 cup Mexican blend cheese, shredded (or any cheddar blend)
4 oz cream cheese, room temperature
1/2 cup salsa
12-24 small corn or flour tortillas (this said 12....I got WAY more than 12)
Cooking spray
Combine chicken and everything else. Mix well (takes a bit to get the cream cheese blended).
Lay tortilla on flat surface and spread filling on it and then roll up tightly. Place either on a greased baking sheet or a greased air fryer basket. Spray the tops with more cooking spray.
Preheat either to 400. To bake in oven, bake for 15-20 minutes or until crispy (this took me longer and still wasn't as crispy was i wanted). To bake in air fryer, do 12-15 minutes or until browned. This was perfect at 12 minutes for me.
They said 12, I got almost double. I might try to put a little more stuff in each, but I felt there was plenty in each and I worry more would have made it hard to roll up.
