Fried Rice

Modified from Air Fryer Cookbook

***This is more of a method than an exact recipe.***

***Needs an air fryer.***

1 cup cooked rice (I didn't measure...I just added all my leftover rice and then added veggies until the mixture looked good)

2 tsp butter, melted

3 cups vegetables, diced (I used a bag of frozen mixed vegetables and some frozen peppers...see above)

Proteins (add what you want, just keep an even mixture...meat should be pre-cooked and eggs scrambled ahead)

1 onion, diced

1 garlic clove, minced

salt and pepper, to taste (I didn't use much salt given soy is so salty)

1 tbsp soy sauce (again I just dumped some in until it looked right)

1 tsp sesame oil (I didn't use this, but after eating it and then reading other recipes, I plan to)

Preheat air fryer to 380. Brush with melted butter.

Mix soy and sesame oil. Add rest to large bowl and mix. Then pour sauce of it and stir until well coated. Put in air fryer basket and cook for 12 minutes (they didn't have you stir, but I think I will stir halfway through next time). They did the sauce after cooking versus before, but most recipes seem to reverse it, so I'm going to try that next time. I did do it after this time.

Serves 4.
