Spanish Rice

2 cups rice

2 1/2 cups diced tomato

2 1/2 cups tomato sauce

3 1/2 cups water

3 tbsp chicken bouillon

1/4 tsp cumin

1 tsp garlic salt

3 tbsp shortening

1 yellow or green pepper

1 bunch green onion

jalapeno juice

Put shortening in skillet, add rice and brown. Mix in diced pepper and onion. Add the diced tomato and tomato sauce. Add chicken base, garlic and cumin. Mix well and bring to a slow boil. Add 3 1/2 cups water. Cover and cook over medium heat for 20 minutes or until rice is soft. Add jalapeno juice to taste.
