Beef and Rice Soup

1 lb stew meat, diced
2 tsp Italian seasoning
1 large onion, chopped
1 lb carrots, diced
2 tsp garlic, minced
1 cup brown rice
2 cans (14 oz each) beef broth
4 cups water
1 can (14.5 oz) diced tomatoes
Pepper, to taste
Place beef in the bottom of a 4-6 quart crock pot. Sprinkle Italian seasoning on it of it. Add onion, then carrots and garlic. Sprinkle the rice over the rest of ingredients. Add the broth, water and tomatoes with their juices. Make sure the rice is submerged in the liquid. Cover and cook on low for 8-10 hours. [I feel this overcooked, so maybe do on the short end.]
