Banana Chip Muffins
Modified from Taste of Home
1 1/2 cups flour
2/3 cup sugar
1 tsp baking soda
1/4 tsp cinnamon
1/8 tsp salt
1 egg
3 bananas, mashed [they said this is 1 1/3 cups, I did not measure]
1/3 cup butter, melted
1 tsp vanilla
1/3 cup semi-sweet chocolate chips [I used minis, about 1/2 a bag.]
Preheat oven to 375. Whisk flour, sugar, baking soda, cinnamon and salt. In another bowl, whisk egg, bananas, melted butter and vanilla until blended. Add to flour mixture, stir until moistened. Fold in chips.
Fill muffin pan, bake about 15 minutes (I think they used the larger muffin pans and so they did 17-20, but I used cupcake pans) or until passes toothpick test.
Makes about a dozen [I got close to 2 dozen, using cupcake pans.]
