Modified from What Can I Bake In My.....
1 lb ground beef
3 tbsp onion, chopped
½ tsp minced garlic
1/3 cup chili sauce (or ketchup)
1 tbsp cider vinegar
2 cups mashed potatoes
3 oz cream cheese
1 tube refrigerated biscuits
Paprika, dash
Preheat to 375. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles. Add the garlic, cook 1 minute until tender. Drain. Stir in chili sauce and vinegar.
In a small bowl, mix mashed potatoes and cream cheese until blended. Press one biscuit dough onto bottom and sides of each muffin cup. Fill with beef mixture. Spread potatoes on top. Bake until golden brown, 20 – 25 minutes. Sprinkle with paprika.
Freeze: freeze in single layer. Partially thaw in fridge overnight. Bake on a baking sheet at 375 until heated through, 15 – 18 minutes.
