Modified from Valerie's Kitchen
16 oz frozen yellow sweet corn thawed (I usually just use it as, it thaws quickly)
1/3 cup diced red onion
1 medium to large jalapeno, seeded and diced finely (or whatever you like, I usually use serranoes)
1 lime, juiced
1/4 tsp salt
1 tsp dried cilantro (they used fresh)
(I have also liked in a little store bought tomato salsa if you want a little of tomato in here...I don't think you need it, but Ray likes a little bit of tomato)
Combine all ingredients in a medium bowl. Serve immediately or cover and refrigerate until ready to serve.
