Ham Potato Puffs

Modified from Quick Cooking

1 tube (12 oz) refrigerated buttermilk biscuits

1 cup cubed fully cooked ham

1 cup leftover mashed potatoes

1 cup (4 oz) shredded cheddar cheese, divided

1/2 tsp dried parsley flakes

1/4 tsp garlic powder (I'm not sure I'm in love with this...may try something different next time)

Press each biscuit onto the bottom and up the sides of a greased muffin cup. In a bowl, combine the ham, potatoes, 1/2 cup cheese, parsley and garlic powder. Spoon 1/4 cup into each prepared cup. Sprinkle with remaining cheese. Bake at 350 for 20-25 minutes or until lightly browned. Serve warm.

Makes 10 puffs (2 per person is good depending on what you serve with it)

This is a great way to use up Easter leftovers - I usually have leftover mashed potatoes and ham so this gets rid of two at the same time while making it a somewhat different.
