Spiced Pork Tenderloin
Modified from Light and Tasty
1 1/4 tsp ground ginger
1/2 tsp salt
1/2 tsp pepper
1/4 tsp ground mustard
1/8 tsp ground nutmeg
1 pork tenderloin (1 lb) [As a note...I don't know where these people get THEIR tenderloins...I can NEVER find anything this small unless I went to some fancy (and therefore really expensive) meat place...so I buy a large one and freeze it into 1 lb sections.]
In a small bowl, combine the ginger, salt, pepper, mustard and nutmeg; sprinkle over pork [I just roll it around in the bowl I mixed it in]. Place on a rack in a shallow roasting pan.
Bake at 375 for 30-35 minutes or until a meat thermometer reads 160 [I always go with this]. Let stand for 5 minutes before slicing.
Serves 3.
