My Best Oatmeal Cake

Modified From Cooking for 2

1/2 cup quick-cooking oats

3/4 cup boiling water

1/4 cup shortening

1/2 cup sugar

1/2 cup packed brown sugar

1 egg

2/3 cup flour

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

confectioner's sugar [mine was so sad]

Put oats in boiling water and let sit for 20 minutes.

Cream shortening and sugars. Add oat mixture and egg and mix well. Combine flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined.

Pour into 8 inch fluted tube pan (I used a bundt pan), coated with cooking spray (and hope this works...didn't for me - the cake came out in pieces as you can see from the picture!). Bake at 350 for 22-27 minutes or until toothpick comes out clean. Cool for 15 minutes (and I DID this) before putting on a wire rack to cool completely. Dust with sugar if you want.

Makes 6 servings.

My cake came out a bit sad looking.....
