Lemon Ginger Cookies

1 2/3 cups flour

½ tsp baking soda

½ tsp ginger

½ tsp allspice

¼ tsp salt

½ cup butter, softened

¾ cup sugar

1 egg (they used large, I used extra large)

1 tbsp lemon juice

1 tbsp lemon zest (I used a lemon between this and last)

1 tsp vanilla

¼ cup finely chopped crystallized ginger


Mix flour, baking soda, ginger, allspice and salt in a bowl and set aside.


In large bowl, cream butter and sugar. Add in egg, lemon juice, lemon zest and vanilla until just combined.


Add in dry ingredients and mix on low until well combined. Mix in crystallized ginger (they had a two part system of this…I just dumped it all in).


Chill for at least an hour (they rolled then chilled…I did not).


Roll into balls. Bake for 13-15 minutes at 350 (they said 11-13).


They had a glaze. I didn’t bother.
