Turkey Empanadas

Modified from Weight Watchers

1 lb ground turkey

1 cup diced onion

1 cup diced red pepper

1 tsp salt

2 cloves garlic, minced

1 tsp oregano

1 tsp ground cumin

1/2 tsp ground coriander

1/4 tsp pepper

1 cup tomato sauce

1 pkg (with 2 rolls) pie crust [They used some product I couldn't find and never have heard of.]

1 egg, beaten

[They had a sauce, I didn't make it so I just skipped that whole section.]

Take out pie dough to warm up to room temperature (important!!!).

Cook turkey, onion, red pepper and salt over medium high heat until turkey is no longer pink.

Add spices and cook for another minutes, stirring well.

Stir in tomato sauce, simmer for a few minutes. Let mixture cool (I just do this while I'm dealing with dough).

I take the pie crust, cut into 4-6 chunks and then roll each out into either a rectangle or a circle. Spoon turkey mixture into dough and then fold in half to make the empanadas. Use fork to seal edges then brush with beaten egg.

Cook in air fryer at 375 for 7-8 minutes. Then flip and do 5-6 more minutes. [They put it in parchment paper...I didn't bother.]

Makes about 10 [depends on how you roll the dough.]
