Chicken and Gnocchi

2 slices bacon, cooked and crumbled.

1 ½ lbs chicken breasts [I used breasts, they used thighs]

¼ tsp salt

1/8 tsp black pepper

1 tbsp Italian seasoning, divided [they used their own, I just used what I already had]

3 garlic cloves, minced

2 cups milk

1 lb gnocchi

2 oz Parmesan cheese, grated

½ cup frozen peas

Cook bacon and set aside. I do it in the microwave, but they did it on the skillet.

Season chicken with S&P and 2 tsp of seasoning mix. Add the chicken to skillet and cook, 5-7 minutes per side or until hits 165. Remove and set aside.


Reduce heat to medium, add garlic and cook until fragrant. Add milk, gnocchi, bacon and rest of seasoning mix. Bring to a boil, reduce the heat to medium and cook, stirring frequently, until the milk has reduced slightly and started to thicken, about 3 minutes.


Stir in peas. Add chicken and cook on medium-low for an additional 3-5 minutes or until sauce thickens slightly.


Makes 6 servings.
