Macaroni and Cheese Casserole

8 oz uncooked elbow macaroni

1/4 cup butter

1/4 cup flour

2 cups milk

6 oz Velveeta cheese, cut into chunks

Salt and Pepper to taste

Preheat oven to 350 degrees. Cook macaroni as directed on package, drain well. Meanwhile, in a large heavy sauce pan, melt butter. Whisk in the flour to make a pasta. Gradually whisk in milk. Bring to a simmer over medium heat, whisking until thickened, about 1 minute. Add cheese, salt and pepper and whisk until smooth. Stir macaroni into cheese sauce. Scrape into a shallow baking dish. Bake uncovered until bubbly and light brown, about 20-25 minutes.

Makes 4-6 servings.
