Vinegar Coleslaw

Modified from A Couple Cooks


1 pkg coleslaw mix (they used ½ a head of a red and ½ of green….what do you do with rest of it? They also used celery, but I’d rather have the carrots in the coleslaw mix)

1 small onion, diced

2 tbsp rice vinegar

2 tbsp cider vinegar

¼ tsp dill

¼ tsp chili powder

½ tsp salt

4 tbsp oil (they used olive, I think I used canola)

Pepper


Slice and shred cabbage if you start from fresh…I did not, so I opened bag and dumped. Mix in onion.


In a separate bowl, whisk vinegars, oil and spices.


Toss cabbage in marinade. This says it doesn’t save well….I made it the night before and it was fine. It was even fine two days later. I wouldn't keep it forever, but it is fine for a few days.
