Modified from Taste of Home
1/3 cup raisins (I did a triple batch as this nicely works in 3's...next time I might times by 6)
1 cup flour
1/3 cup packed brown sugar
1/2 tsp baking powder
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup molasses
3 tbsp butter, melted
1 egg white
1 tsp vanilla
1/3 cup chopped walnuts
Preheat to 375. Cover raisins with boiling water and let stand for 5 minutes; drain and set aside.
Whisk together next 6 ingredients. In another bowl, combine molasses, butter, egg whites and vanilla; stir into dry ingredients until just moistened.
Fold in walnuts and raisins (batter will be sticky).
Divide batter in half, spread each half into a rectangle (they said 12 by 12). (They recommend wetting your hands and that does really help here!) Place them a couple of inches on parchment paper lined baking sheet. Bake until edges are lightly browned and set, about (This took me longer, but I think that I didn't get the first batch "flat" enough....mine took about 20 minutes....or maybe my rectangles were larger (I didn't measure)...I just went with what looked about right.)
Transfer to a cutting board and with a serrated knife, cut diagonally into bars. (I gave it a few minutes to cool a bit before doing this.)
Makes about a dozen.
