Spicy Grilled Salmon
Cookin with Senor~Cowgill
Several 8 oz ssalmon fillets
extra virgin olive oil
kosher salt and fresh ground pepper
2 tbsp dried ground ancho peppers
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground cinnamon
1 tbsp paprika
1 tsp kosher salt
rub fillets in olive oil
salt and pepper well
mix seasonings together
sprinkle each fillet liberally with seasoning
coat grill with olive oil to pervent sticking
grill over hot coals 4-5 minutes each side until done
