A simple salad with that cajun kick and crunch that will satisfy.
4 skinless boneless chicken breasts or one half turkey breast
1/4 head lettuce
purple cabbage
1/4 red onion sliced thinly into crescent shape
romaine and/or other assorted greens
tomatoes, cut into bite size
mandarin oranges, peeled, separated
cajun blackening seasoning
croutons or tortilla strips
Balsamic Vinagrette or salad dressing of your choice
Make salad, tear by hand into bite size pieces lettuce, greens and purple cabbage and combine in large bowl. Toss lightly.
Place tomatoes and mandarin oranges on top.
If breasts are thick you may need to slice longways so that they cook quickly and throughly. Start grill or pre heat iron skillet on med hi. Coat chicken liberally with blackening seasoning. Cook quickly on each side only turning once. Cut into bite size pieces place on top of salad and serve immediately with dressing on the side..
