Piled high with juicy smoked pulled chicken tossed with mushrooms and cheddar, this sandwich will have everyone raving about the awesome Yardbird! These are incredible served as sliders! Use fresh baked buns or dinner rolls for that little extra BAM!
ingredients
1/2 smoked chicken, pulled from the bone (a roticery chicken would also work)
Sesame seed buns or barbecue bread or kings hawaiian rolls
butter
8 slices thick cut applewood smoked bacon
Cooking Spray
1 (8-ounce) package pre sliced mushrooms
8 ounces grated sharp cheddar cheese
1 cup mustard based barbecue sauce, divided
mayonnaise (optional)

Preheat oven to 375°.
Butter both sides of the bread slices and toast in the oven for 6-8 minutes or until golden.
Fry the bacon in a cast iron skillet until crisp but not crunchy.
Heat a non-stick skillet coated with cooking spray over medium heat; add mushrooms and sauté until their juice has been evaporated. Season with salt and pepper. Add to the pan the smoked pulled chicken, 1/2 cup barbecue sauce, and cheese; mix thoroughly until the cheese has melted.
Spread mayonnaise on one side of each of the bread slices. Top each of four slices with the chicken mixture. Place two slices of bacon on top; finish with 2 tablespoons barbecue sauce on each sandwich.
