1 1/2 lb sushi grade ahi tuna
2 tbsp Olive Oil
1 tbsp Soy Sauce
Fresh ground black pepper
2 cloves crushed garlic
Sesame ginger seasoning
Wasabi

Ginger Tataki
1/4c soy sauce
1/4c lime juice
1/4c olive oil
1/4c mirin
1/2 tsp grated ginger
1/2 shallot minced
Combine all liquid ingredients and whisk in olive oil last. Add in the ginger and shallot and mix well. Let sit.
Searing the tuna:
Add the Sesame Ginger Seasoning to both sides of the tuna. Get the heaviest skillet you have and add a little olive oil. Put it on high flame until it is smoking (5-7 minutes). Sear the tuna 30-45 seconds on each side. Remove from pan immediately. Do not overcook. If overcooked it will be dry and chewy.
Slice the tuna and arrange on each plate drizzling with the Tataki sauce. Serve with wasabi on the side.
