Delicious on a sunny, fall afternoon.
Serves 4
2 cups sliced fresh or frozen peaches , thawed
2/3 cup peach or apricot nectar
2 2/3 cups champagne
Combine peaches and nectar in blender and process until smooth. Freeze peach mixture in freezer (for up to a week)
Remove peach mixture from freezer about 30 minutes before serving. Spoon equal amounts of peach mixture and champagne into champagne flutes.
