Pasta and Pancetta
1/4 lb pancetta (Italian ham) or thick sliced lean bacon cut in small pieces
1 ear sweet corn (optional)
8 to12 oz prepared pasta of your choice
1 cup arugula or other green coarsely chopped
1 tbsp minced garlic
1 cup fresh mushrooms sliced
extra virgin olive oil
1/4 cup pecorino cheese grated
Cook pancetta until crispy add garlic, mushrooms and corn, let simmer a few minutes
Boil pasta until done, drain and place back into pot, add 2 tsp olive oil and salt to taste, then toss this keeps pasta from sticking together. Add greens to pancetta mix remove from heat and toss thoroughly add on top of pasta and toss thoroughly. Season with salt and pepper to taste and top with cheese.
