Snickerdoodle Cheesecake
This has been one of our favorites for a long time and is pretty close to the real thing. If you would just like to buy one these check out Hope's Cheesecake - Gulf Shores, Al.
They will overnight anywhere!
Crust
2 Cups Cookie Crumbs
6 Tablespoons Butter Or Margerine
OR (just buy a premade graham cracker crust)
Filling
16 Ounces Cream Cheese -- softened
1/2 Cup Sugar
2 Eggs
1 Teaspoon Vanilla extract
Toppings
7 Oz. Caramels
4 Oz. Evaporated Milk - divided
1/2 Cup Pecans -- chopped
3/4 Cup Semisweet Chocolate Chips
Preheat oven to 300F Mix crumbs and butter, press onto bottom and sides of 9-inch springform pan. Bake 10 minutes.
Beat cream cheese and sugar until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla. Pour into crust and bake 35-40 minutes. Let cool.
Microwave caramels and 2 oz milk in small bowl on high for 4 - 5 minutes or until melted, stirring every minute, let cool slightly. Pour over cake.
Let caramels cool then melt chocolate morsels and 2 oz of milk and pour over caramel then top with pecans. Keep refrigerated. Garnish with whipped cream if desired before serving.
