Tom Macy, who also took the top spot at our tasting in 2018, builds his Old-Fashioned on two ounces of Wild Turkey 101 rye, a teaspoon of 2:1 Demerara syrup and three dashes of his personalized bitters blend known as Dad’s Bitters—a mix of Angostura, Bitter Truth orange and Bitter Truth Jerry Thomas’ Own Decanter bitters—stirred and strained, then garnished with both lemon and orange twists. “You can taste both garnishes, but they don’t dominate,” said Morrissey. Perhaps unsurprisingly for a recipe that was the result of more than 40 attempts in the making, Macy’s Old-Fashioned was deemed “dead on” by Cecchini and “far and away the best one,” by Sterling."
Recipe Makes 1 drink
2 ounces rye, preferably Wild Turkey 101
tiny splash of water
1 teaspoon rich Demerara syrup (2:1, demerara:water)
3 dashes Tom's own concoction: Dad's Bitters (see recipe below)
Orange, Lemon and / grapefruit peels
Combine all ingredients in a mixing glass over ice and stir until chilled.
Strain into a chilled rocks glass over a large ice cube.
Garnish with orange and lemon and or grapefruit twists.
1 1/2 ounces Angostura bitters
1 ounce Bitter Truth Orange Bitters
1 teaspoon Bitter Truth Jerry Thomas Decanter Bitters
Combine all ingredients in a shaker bottle before use.
Rich Demerara is a 2:1 syrup meaning it is 2 parts sugar for each 1 part water. Alternatively, you may have heard of simple syrup which is a 1:1 ratio. Rich syrups will be sweeter and thicker. Demerara brings a nice weight to drinks that is an often overlooked characteristic of a cocktail. Works well in most whiskey and various rum cocktails. I find this can be kept on a shelf but keeps much longer in the refrigerator.
Place a small sauce pan over low to medium heat.
Pour in 2 cups of Demerara sugar
Pour in 1 cup of hot water
Stir continuously while the sugar dissolves
Immediately remove from heat once the sugar is dissolved.
Let cool before use
