Stick Honey Shrimp (served over rice with broccoli)
Super easy and delicious weeknight dinner takes about 30 minutes to pull this together.
Serve over rice and accompany with a fresh vegetable such as broccoli or asparagus.
SERVES 4
2 small yellow onions
1 green chili
1 lb peeled, jumbo shrimp
½ bunch of oregano or thyme
3 tablespoons olive oil
2 tablespoons fish sauce
2 tablespoons honey
1/2 teaspoon freshly ground black pepper
1/2 lemon, plus wedges to serve (optional)
Mis en place, peel and finely slice the onions. Halve, deseed and finely slice the chili. Devein and butterfly the shrimp. Pick the oregano or thyme leaves.
Place a large frying pan on a medium heat and add the olive oil. Add the onions and sauté for 10 minutes.
Add the chilli, the shrimp, and herbs. Fry for a couple of minutes, then add the fish sauce, honey and black pepper.
Squeeze in the lemon juice and turn up the heat. Leave to bubble away for 4–5 minutes, until the shrimp are cooked and the sauce is thickened and sticky.
Serve immediately, with lemon wedges for squeezing, if you like.
Serve over rice with furikake along with a fresh veg
