Easy and fabulous fresh summer flavors. This simple dish just takes a good hot grill and four ingredients. The sweet peaches provide the sweet texture and backdrop for the crunchy roasted hazelnuts and the blue cheese crumbles provide a foil for the sweet, ripe peaches. Serves four. Get ready to buy more peaches and blue cheese!
Four ripe, clear seed peaches
1/3 c toasted hazelnuts, coarsley chopped
handful of torn basil leaves
1/3 c blue cheese crumbles
honey
Olive oil
Toast the hazelnuts and coarsley chop
Fire up the grill, high heat.
Slice peaches in half and remove the pits
Drizzle peaches with olive oil, grill for 3-5 minutes over direct heat.
Flip peaches and grill 3-5 minutes more and remove
Assemble two peach halves on each plate then top with nuts, blue cheese and basil
Drizzle with honey, serve immediately
