Fabulous Sunday gravy. We like to use deli made Italian sausage if in the Birmingham Al area try Mr.P's Deli. If not, any good Italian sausage will work.
1 lb Italian sausage - cut into 3 in lengths
1 med onion chopped
4- 6oz cans tomato paste
2- 28oz cans whole tomatoes
3 cups water
1 tsp crushed garlic
1/4 cup good red wine
1 tsp sugar
1 tbsp Italian seasoning blend
salt and pepper to taste

Cut Italian sausage in 3" pieces, brown and reserve 2-3 tbsp drippings.
Add onions and garlic, sauté in reserved sausage drippings until translucent then add tomatoes and tomato paste and remaining ingredients simmer for at least 4 hours, stirring occasionally.
In the last 30 minutes break eggs into the sauce, just drop them in the sauce and DON'T stir, they will hard boil. (optional)
Serve over pasta, top with grated parmesean, garlic bread and one hard boiled egg on the side.
